We are OVERJOYED to have this experimentally processed lot separation from Rudy Carcamo as our first offering at Shuv! We might be a new company, but this is Steve and Emery’s third year working with Rudy’s coffee through our friendship with importer Kodachrome Coffee in South Bend, Indiana. This relationship led to an invitation for Steve to visit Rudy on his farm in early 2020, and we look forward to continuing to build this relationship further through Shuv Coffee in the years to come.

In the cup, we taste a rich maple sweetness, baking spices, and a vibrant orange and lemon acidity.

About the Varietal:

This coffee is a mixture of primarily Red and Yellow Catuai varieties, as well IHCAFE 90 and Lempira, which are common to the climate and growing conditions of Honduras.

About the Process:

Closely resembling a traditional honey process, this coffee was pulped, and then fermented inside of airtight containers along with Cima coffee yeast for 60 hours. Cima yeast is known for enhancing brightness, quality, and mouthfeel within the cup. Following this fermentation, it is dried in its own mucilage.
