Rudy Carcamo’s coffee is a staple that we try to always have on our CLASSICS lineup, and this is a special one.

This is the second experimental lot separation that we purchased from Rudy’s last harvest. It comes from Finca el Joconal, one of three farms managed by Rudy in La Unión, Lempira, Honduras. Although we are a new company, this is Steve and Emery’s third year working with Rudy’s coffee through our friendship with importer Kodachrome Coffee in South Bend, Indiana. This relationship led to an invitation for Steve to visit Rudy on his farm in early 2020, and we look forward to continuing to build this relationship further through Shuv Coffee in the years to come. Rudy tried some new coffee experimentations this past year and we are definitely impressed by the results, and can’t wait to see what’s next!

About the Varietal:

This coffee is a mixture of primarily Red and Yellow Catuai, as well as some IHCAFE 90 and Lempira that are common to the climate and growing conditions of Honduras.

About the Process:

Closely resembling a traditional honey process, this coffee was pulped, and then fermented inside of airtight containers for 48 hours. Following this fermentation, it is dried in its own mucilage and solar dried on patios.
